1. Carried-under-arm pig

The name “carried-under-arm pig” originates from the custom of the local people who often carry this breed of small black pigs under arm before selling them at the fairs. This breed of free-range pigs often makes self-feeding on the steep slopes. Carried-under-arm pigs are processed into grilled, stir-fried, steamed dishes with bischofia javanica leaves and ivy-rue Zanthoxylum rhetsaor seeds, which are essential and special spices to make a perfect dipping sauce.
